Some of my earliest memories are of walking home from the boulangerie, pulling at my mother’s dress, waiting for the moment she would tear off the warm quignon of the baguette and hand it to me.

The crust would crack. The crumb was still soft.
It tasted like toasted flour, salt, and hard work.

That was the dough I understood.

Golden. Loud. Baked in an oven.

Bao is different.

No crust. No browning. No crackle.

Just steam.

I first learned bao in Beijing. One day, my favorite Chinese āyí 阿姨, an “auntie” not always by blood but definitely by care, asked me what my favorite Chinese food was.

“Bao,” I said.

She smiled.

“Then we’ll make them together.”

So we did.

She moved fast. Flour, filling, wrapper, fold.
Her hands already knew what to do.

Mine did not.

In Chinese, there is a phrase I like: 手上功夫 literally "skill in the hands".
The kind of skill that only appears after doing the thing again and again.

Bao is full of that.

The dough has to be soft, but strong enough to hold.
The wrapper has to be thin, but not weak.

The filling is usually made of simple ingredients like chives, pork and eggs.

My āyí taught me to add stock to the mix so it would not dry out in the steamer. That stayed with me. A good bao filling has to stay juicy without leaking, tender without becoming wet.

Simple food. Not simple work.

Back home, I wanted to try it again from scratch.

No āyí beside me. No one fixing my folds.
No one telling me when the filling was too much.

Just flour, yeast, chives, pork, eggs, stock, steam, and memory.

My first solo batch looked like proof-of-work in the most literal sense.

The taste was amazing.

That was not the problem.

The problem was texture and structure. My dough was too thick because my hands were not skilled enough yet. I rolled the wrappers too heavy, folded them too clumsily, and some of the bao opened in the steamer like they wanted to file a complaint.

They are supposed to stay closed.

Very honest food.

But they had life.

They smelled of chives, pork, warm dough, and steam.

The yeast had done its quiet work. My hands were still learning theirs.

That is where the Bitcoin parallel became obvious.

Proof is not a slogan. It is not what you say you did.

It is what remains after the work.

In baking, the dough knows if you rushed.

In Bitcoin, the network knows and sees everything.

Both require time, energy, and patience.

The lid opens.

The proof is there.

A bao is not Bitcoin.

But both remind me that the best things are not announced into existence.

They are proofed.

And once they are ready, they are meant to be shared.
